I'll be posting back on this, as I'm busy all late afternoon with work, furnace guy coming, etc. Besides, the RG is arriving home a day early, so he'll dream something up.
I made an easy banana cream pudding for dessert, though.

I am having a problem w/C&P from this site for some reason.
I modified the recipe by adding the carrots in the beginning and the fresh spinach at the end. Both veggies were getting a bit old for a salad.
Instead of lime zest, I used a squirt of lime juice.
I added a 1/2 cup ish of coconut milk instead of water for better mouth feel.
I will be making this again. It's the first time I've tried making harrisa spice mix and it was easier then I thought it would be. I can easily see making a larger batch of this and using it on chicken or tofu or fish.
I served it with a mix of brown & white jasmine rice.

(22,027 posts)We're at the mountain house and the Landlady(!) wanted me to cook something that will compliment a 30º F night and a fire. Here's my plan.
Four-meatloaf consisting primarily of about a pound of ground beef, pork and veal, (there will be a small portion of pepperoni to come). Put the three meats into a large mixing bowl and add two eggs and a healthy portion of your favorite breadcrumbs. Mince a small onion and toss it in. Mix it all up using your hands because who doesn't like to play with their food?! Season as you like but at least add salt and pepper and maybe some garlic.
Use a bread pan, of course, and lightly oil it. Layer the meat mixture in 1/2" increments putting very thin slices of mozzarella cheese and an occasional couple of slices of pepperoni between each layer. Continue the layering process until you fill the bread pan. Put the loaf in a pre-heated oven at 375º. After about half an hour, take it out and put a glaze on the top; I prefer a barbecue sauce to ketchup but to each their own. Put the thing back in the oven for another half hour or so and voila, meatloaf.
The accompaniments tonight will be smashed potatoes (with the skins) slathered in butter with fresh coleslaw; the local supermarket had an amazing deal on cabbage, (I find it hard to believe that I just wrote that!).
Simple dessert of Vanilla ice cream and cream sherry.
We'll be cuddling in front of the fire. Life is good.
