Coconut yogurt

I have a yogurt maker and have successfully made dairy yogurt but not coconut yogurt. The stuff separates, with the fat on the top and almost clear liquid on the bottom.
Does anyone know how to use a yogurt maker to make good coconut yogurt?

While non-dairy products made from coconut or soy will culture just fine, they won’t gel like dairy yogurt. So you’ll need to use a thickening agent like gelatin, pectin, or a starch type thickening agent like tapioca, corn starch, arrowroot, etc. Most or all of those require heat to activate. Some harder to find thickening agents like modified corn starch or carrageenan can be used after culturing and don’t require heat to activate, but to solve your separation problem you’ll probably want to thicken first, then culture.
