What's for Dinner, Wed., Dec. 5, 2018

Sloppy joes using shredded roast beef; I am making my own sauce. Brioche rolls, buttered and toasted.

Coleslaw using bits of fresh pineapple.

Dessert: I bought these very delicious spice cookies from Aldi. They are shaped like windmills and are called spekulatius, and they are made in Germany. For something made in Germany, they are quite reasonably priced. I top them with whipped cream from a can. Is it ever good! I try to hold the line at 3 cookies but it usually ends up being 4.

Keep telling myself it's OK (holidays and all) plus I work out at the gym.

1. Tonight pesto rubbed

Baked chicken thighs, sweet potatoes and broccoli, sheet pan style.

I made and froze garlic chicken soup earlier today, knowing that those would be good against cold symptoms later this fall-winter. It also had the advantage of clearing out the bag of chicken bones from the freezer as well.

2. Happy National Comfort Food Day!

I just had a PBJ to celebrate.

Leftover turkey means:

It's kind of controversial. My husband adores it. I'll eat it no problem and my daughter really dislikes it. (She's fancy. Recipes that depend on Cream of Mushroom Soup are decidedly not.)

3. Chicken Divan...made Gluten free. I cooked chicken yesterday for hubs lunch used leftover.

I make my own sauce( no soup ) basically a bechamel sauce. I used a frozen California blend as I was out of broccoli..grated sharp cheddar cheese on top. This was served with rice (Jasmine) and a salad. It turned out really well. I have grapes and apples for dessert.

I'm making sloppy joes, too! Yours sound a bit more classy than mine, however.

I also make my own sauce; it's a spicy barbecue type of flavor. I use kaiser rolls and i put sliced cheddar cheese on the beef.

Mixed greens salad and potato chips.

Nothing fancy but still tasty!

7. Lipton noodle soup

With sauteed chicken breast and celery added. Had a couple clementines, some raspberries and some pistachios for dessert.

I prepped for lunches the next couple days. cooked off quinoa to make two salads. One is cold curried quinoa with tangerines (i am using the clementines), dried cranberries and tstd almonds. The other is a mediterranian chicken breast and quinoa salad.
