This is a recipe that hubby adapted while he was still running his restaurant. It was always a big hit, and it's a really delicious cookie. Gotta use good rich dark chocolate, and you've got to be sure not to overmix them! The secret is in the cinnamon and cayenne pepper you mix into the sugar to roll the cookies in. It gives you just that hint of heat that makes you want to keep eating!
These also freeze perfectly. If you're baking them from fresh, it's 6 minutes, turn and 6 minutes. If you're baking them from frozen, just put them frozen onto the sheet and bake them 10 minutes, turn and 10 minutes, and they come out practically identical. We love the little chocolate chip addition onto the top of the cookie, too. A bit of visual interest and another little burst of that rich chocolate flavour.

(3,268 posts)You should just be able to copy and paste from the description. If you click on "show more" you can just copy it into Notepad or Word or something.

(2,944 posts)It is like making snickerdoodles. I put them in the fridge for a few hours, rolled them into balls & put them on wax paper. I rolled them in the same container I use when I make my snickerdoodles. While the first batch is baking, I roll the remaining & put them back on the wax paper for the final batch.
They will be good with a cold glass of milk. I had a hot one with a glass of Pinot Grigio. 😀
Since there is only two in this household, half are in the freezer for enjoying later.

These are formed into a roll and put in the freezer, then sliced and baked when you need them. Just like Pillsbury chocolate chip !!
They have the cinnamon, cayenne pepper and black pepper mixed in with the dry ingredients.
They are always a hit when I take them to a party. Very dark because they call for a good bit of cocoa. I use the organic from Costco.
I got some last year and when I ran out, they were out. Turns out they bring it in around Thanksgiving and when it is gone, no more till next year.
When we went to Costco last week we bought 3 bags of it. Hopefully it will last a year!!!!

He made big batches, rolled them into long rolls, chopped them, rolled them in the sugar/cinnamon/cayenne mixture, put the chocolate chip on top, and then froze them to bake whenever we needed cookies. They were under 15 minutes to bake from frozen in those super awesome commercial grade convection ovens, so if we were out, it was usually a pretty short wait for someone in the restaurant to get fresh, warm cookies.
