What's for Dinner, Sat., Feb. 23, 2019

Appetizer:More of those Brazilian cheese balls, since they are so good with wine. This time we filled them with brie and put a touch of fig jam on it.

Meatloaf covered with homemade tomato sauce and cheese.
Roasted zucchini slices sprinkled with sauteed garlic and basil, sea salt and pepper.

Dessert: 1/2 a nut cake slice, something the RG bought at the Portuguese grocery store. We'll put a little vanilla ice cream over it. It's so rich we only want a few bites.

on chicken thighs and cooked them at 425 degrees for 22 minutes. Not bad. I have yet to eat my spinach.

We have an issue at my crib. I like chicken breasts and the wife likes the thighs. Since I do all the cooking, we eat the breasts.

I am warming up left over pizza that TJ must have made in the wee hours.
I'll have some leftover tossed salad if it's not too tired. If it is I will have some spinach, grape tomatoes and goat cheese.

It is a work night for TJ and she and the FLFC are still snoozing.

again - my husband's favorite meal - he works weekends so I like to make his favorites then. Mashed potatoes and gravy of course, and spinach with sour cream and horseradish. Dessert? A second glass of wine ....

It was pretty good. One thing they recommended was using wild shrimp, which I did. It’s a bit more costly than the imported shrimps from India, Thailand, Malaysia and Indonesia that were on sale at the Sooper’s, but worth it.
