What's for Dinner, Wed., Mar. 13, 2019

Chicken paillards. Broccoli rabe with garlic and red pepper. Salad, also made by the RG 'cuz I was working late, is lettuce, cucumber, egg, and red onion with salad dressing he made.

Dessert is pecan sandy-type cookie sandwiches (gluten free, though) with filling he also made.

I need to get rid of this cold soon, otherwise I may never get back to cooking anything healthy and decent.

Made my own with lots of chunks of red and green peppers. Served it with basmati rice. Haven’t decided on dessert, but I have some Trader Joe’s mango mochi in the freezer.

Baked Coho Salmon with maple syrup and brown sugar coated with crush roasted almonds with sea salt (a little Japanese sauce on the salmon when it's done cooking). Broccoli and a salad with albacore tuna.

I've been putting tuna on my salad lately.
My cats have realized that when I begin shredding kale, that means they will eventually get a spoonful of tuna. So now they get excited about the kitchen when the greens come out, even though the can opener doesn't sound for about 15 minutes later.

Salad:
Shredded, kale, spinach and romaine
Beefsteak tomato, carrots, broccoli, apple slices, tuna, Parmesan cheese, Italian and ranch dressing.

Beef (inexpensive steak) cut in strips and baked in a BBQ sauce
Mac and cheese casserole
Lima beans

I was out taking care of some matters and this was what awaited me.

FLFC and TJ were both in bed when I arrived home. FLEC was eating chicken and pork chop when I left.
