What's for Dinner, Fri., Mar. 29, 2019

Posting early due to working late.

Sausages cut in half, slow-cooked. Served over buttered pumpernickel with mustard.

Eggplant rounds, breaded, with melted cheese on top.

Assortment of black and green olives with red pepper.

Dessert is pecan praline ice cream with bourbon. New flavor.

Source for the recipe Budget Bites

INGREDIENTS
4 oz. lo mein noodles ($1.13)
2 Tbsp butter ($0.20)
1/4 tsp crushed red pepper ($0.02)
1 large egg ($0.25)
1 Tbsp brown sugar ($0.02)
1 Tbsp soy sauce ($0.02)
1 Tbsp sriracha rooster sauce ($0.08)
1 handful fresh cilantro ($0.22)
1 sliced green onion ($0.06).

Instructions at their site.

I'm out of eggs, so pass on that. I'm adding the tofu cubes for protein & I'll add minced onion, garlic & some ginger to the sauce.

I've tried many recipes from that site and they all turn out great, are pretty easy, and not that expensive to make.
