What's for Dinner, Wed., April 3, 2019

Steak. It's going to be cut in slices and served over a bed of carrot and potato puree.

The carrot and potato puree will also be served as a side dish.

Spinach salad with tomatoes, hardboiled egg, red onion, and bacon.

Corn, fresh. Cut off the cob.

Broccoli, chopped, along with one small potato, also chopped.

And trying a 'vegan BBQ Char Sui'
over Jasmine Rice.

I'm using an organic tempeh in strips with this marinade.

Ingredients
9-12 oz vegan chicken (or seitan strips)
1/2 tsp Chinese 5 Spice
2 TBS agave nectar
2 TBS Shao Xing Chinese rice wine
1 TBS hoisin sauce
1 TBS Thai chili sauce
1 TBS dark soy sauce
2 tsp vegan oyster or mushroom-flavored sauce
2 tsp molasses
1 TBS minced garlic
1 TBS sesame oil
1 tsp red food coloring (critical for the fiery red color)
GARNISH (optional) – sliced scallions or green

(( Iam using a premade tempeh, so I dropped instructions on making the protein.))



2. Spread seitan slices in a ceramic 9 x 13 x 2 dish or two smaller ceramic baking dishes. Pour marinade over seitan and with tongs toss to thoroughly coat each piece with marinade. Let stand at room temperature for 1 hour, stirring seitan strips occasionally. The last 20 minutes of marinading, preheat oven to 400 degrees F.



3. For saucier, juicier seitan for eating over rice, roast for 20-25 minutes or until seitan is sizzling but there is a little bit of thick sauce under the strips. Use long handled tongs to frequently stir seitan stips during the roasting process.

For chewier, sticky seitan with crisped edges, roast for 30-35 minutes. Use long handled tongs to frequently stir the strips during the roasting process. Most of the sauce should be absorbed and what little is left is very sticky. Turn on the boiler to high and broil for 3-5 minutes until edges of the seitan are starting to blacken. Immediately remove from broiler and let cool 5 minutes before serving.

I'm going with tbe chewier cubes/strips.

We're packing the car to go the the mountain house. I guess we'll decide on the way there so I'll check back later if there's anything delicious to report.

carrots, broccoli, red bell pepper, onion and celery all over rice.

If my guy didn't eat them all, there will be an Oreo cookie or two for dessert.

Cooked with onions and butter. Vodka and Tylenol chaser to deal with the sore muscles I got from gardening all day.

lots of rosemary on the roast, it came out pretty good.
