Cottage-cheese pancakes with caramel-apples

Cottage-Cheese Pancakes

Taste a little bit like cheesecake.

serves 2
- ~250g flour (about 10 tablespoons or a little bit more than 2 cups)
- 3 tablespoons seminola (for fluffiness)
- 4 tablespoons sugar
- 250g cottage-cheese
- 3 eggs (for binding)
- pinch of salt
- shot of oil
- about half a glass of milk (depends on desired thickness of dough)

Whisk thoroughly for about 10 minutes until it's an even dough.

Oil in hot pan. Bake dough into small pancakes about half an inch thick.



Caramel-Apples

You need a pot with a fitting lid. Don't use a wooden spoon for stirring. Use a metal table-spoon.

- about 1 apple per person, cored and cut into bits (peeling optional)
- about 1-2 tablespoons of sugar per apple
- a dash of water (about 1 shot-glass)
- cinnamon, nutmeg... (optional, for a nice Halloween-season touch)

Spread sugar evenly in the pot, bring to medium to high heat. It will take about 5 minutes for the sugar to start melting. Don't get impatient, don't increase the heat too high.
First, the sugar looks normal. After a while it will start to release the absorbed water as steam. When the sugar stops releasing steam, we are close to the point where it will start melting.

Once the sugar starts melting, start stirring and keep stiring, because you want the sugar to melt and caramelize evenly. Careful: Even though it won't look like that, molten sugar is VERY HOT.
The molten sugar is initialy transparent, will turn into a light brown, will turn a dark brown, will start to foam/bubble. The foaming is the absolutely LATEST point at which you should add a dash of water (not too much!) and the apples. Close pot with lid and reduce heat to medium.

There will be a lump of molten/caramelized sugar stuck on the tip of your stirring-spoon. Just stick the spoon into the apples: The sugar/caramel will dissolve away.

I haven't tried it yet, but you could add spices like a pinch of cinnamon or a pinch of nutmeg.

Cook with lid for 15 minutes or so or until soft, stirring occasionally to make sure that all apple-bits get some of that caramel. The apple-juice will dissolve the caramel into a sauce.

I always burn the sugar. It sure teaches how important a few seconds can be-- wonderful at one moment, then a sticky smelly mess the next.

I have made ricotta pancakes before and I think they were the best I ever had.

Question: what is 250g of cottage cheese in cups?

When my kids were little, I had a pancake recipe that involved cottage cheese, eggs, rolled oats, and a banana in the blender. Made pretty decent and reasonably healthy pancakes, but I haven’t made them in years. I’d like to find that recipe again.
