These are ridiculously easy and go with just about any dinner!
Set oven to 350.
Put 3-4 tablespoons of butter in a 9 x 13 baking dish, set in the oven for about a minute or two until the butter is just melted but not brown. Remove from oven and sprinkle 1/3 to 1/2 cup of grated Parmesan cheese over top of the butter.
Wash 5 medium potatoes and cut them in half lengthwise. Place cut side down on top of butter-cheese mixture. You want to completely fill the pan, so you may need to adjust the number of potatoes you use, depending on their size.
Return to oven and bake 45-55 minutes or until potatoes are soft. Carefully remove each potato half with a spatula. You want the cut sides to be golden brown. If they arent, return to oven for another 5 minutes or so.
Good served with sour cream.

You could use parchment paper if you had concerns.

(6,588 posts)Usually add rosemary too. Our grill has an upper "baking rack" so I can let things cook on the grill surface while the potatoes slow bake on the rack & get nice & brown all over.
Add sour cream & chopped green onions & I'm in potato heaven!

(42,770 posts)potatoes first till semi soft. Then slice lengthwise into fours. On a cookie sheet, coat with olive oil. Coat each side of each chunk with the pan oil salt and pepper. Bake at 375 for about 20-25 min total. Half way through turn chunks & throw in the parm. When crispy and brown, done. They are delicious.
If I am feeling ambitious, I start by wrapping garlic cloves with olive oil in foil in the oven to roast. My grocery has started selling containers of freshly peeled garlic which is totally worth the splurge IMHO. Then when potatoes done, mix garlic in.
Better yet..serve with dollop of sour cream and chopped green onion or chives.

(50,261 posts)there was hardly any remaining on the potatoes. Wrong pan maybe? I used a glass Corningware dish. They still tasted good, but I was hoping for a parmesan crunch.
