What's for Dinner, Mon., April 29, 2019

Chef's salad with diced ham, chicken, and Swiss cheese. The usual tossed greens and vegetables.

BIG salad!

And this probably isn't true to form for a Chef's salad but I'm putting snap pea crisps on top for crunchiness.

I was able to use some of my garden ingredients in it, like scallions and a few different lettuces.

Meatless Monday-vegan italian sausages, peppers & onions over a very curly Italian spiced pasta

However, at 5am I ran into a seafood truck up from the gulf at a convenience store and bought a pound of shrimp off the guy. I'm thinking stir fried with a few veggies and a honey-sriracha sauce.

Salad of red lettuce, sliced radishes, sliced olives and tomato wedges.

Spaghetti with a primavera sauce. Garlic bread.

Fresh fruit for dessert.

We usually have two meatless meals a week, but not tied to any specific day.
