What's for Dinner, Fri., May 10, 2019

Posting early due to working late.

Steak, pan-fried in cast iron skillet. Marinated in rosemary and garlic.

Creamed spinach.

Carrots and peas.

Grilled fennel with melted parmesan.

Dessert: a little piece of peach pie with pecans & a cup of chamomille tea.

It's been a dank day and the heat from the oven will heat up the place.

Roasted chicken in a lemony coq-au-vin with red wine and olive oil, thyme, rosemary, salt and pepper to taste. Frequent basting is the key to keeping this bird tasty and moist.

Wild rice steeped in a beef broth with baby 'bellas and minced onions.

Steamed spinach with slices of almonds.

Orange sorbet for dessert.

She loves to make stock from chicken or beef then freeze them in individual containers. She likes us to use them for flavoring instead of water or oils. Very tasty!

6. I'm making and tweaking my salmon patty recipe from yesterday

For a 5oz can of pink salmon, I used only 1 egg to drained salmon, panko, & the spices, it was too dry & fell apart as they fried. So in checking, one place recommended draining& reserving the salmon juice& and adding it back in just before forming patties; I have cats, they know all fish juice is theirs, so from now on, 2 eggs, & still chilling ~1 hour. I fry them 350 pan, 8ish minutes each side.

There is leftover risotto, and I'm roasting a few brussel sprouts, drizzled with maple syrup.

Over the remark about the fish juice.

Mine will smack their lips for an hour. Then they sit around looking at each other with a “life is good” look on their faces.
