Tossed salad with garden greens and chive flowers! Also Persian cucumbers, red onion, and pea shoots. This will be a very attractive salad because it has my feathery watercress and also red lettuce in it.
The RG marinated some chicken breasts and will "bread" (using almond flour) and bake them later.
Dessert: strawberries and nectarines. Topping of frothy cream; chopped mint.

(9,819 posts)Toppings will be peppers, onions, and kale sauteed with garlic in olive oil. I have tomato sauce, ricotta, parmesan. Am trying to decide how to assemble everything. Does anyone have suggestions? I also have marinated artichoke hearts and olives, but that might be overkill. Polenta crust is in the oven right now.
Steamed broccoli as a side.
ETA: I also have fresh basil from the garden which I will add to the sauteed kale & garlic and a zucchini that I grilled earlier in the week.

The coleslaw has a twist, you start with just a regular coleslaw mix of cabbage and carrots, add onions and bell pepper and then you dress it with - 1000 Island dressing.

(1,706 posts)it gets the menfolk to eat vegetables without complaint, and it's a good way to use up small amounts of stuff in the fridge. We had dessert for a change: baked apricots - halved, pitted apricots with sugar and butter and nutmeg in the pits, baked at 400 for 20 minutes.
