What's for Dinner, Sat., May 25, 2019

Posting early due to working late tonight.

I don't know what we're having but I see shelled cranberry beans, Italian broad beans, and bacon in the kitchen from this a.m.'s shopping trip.

Had breaded chicken cutlet sandwiches for lunch, dressed with avocado, tomato, lettuce, and zucchini slices (had been sauteed in olive oil w/herbs).

is simply chili dogs. Because tomorrow we eat big,,I have 20 pounds of Pork Butt in smoker, over apple wood that has been soaked in apple juice for 24 hours. My own rub and sauce of course. And a fun little trick I do,, I put a shallow pan of brown beans in place of drip pan in smoker. the juice drips into beans. Makes a perfect starter to incredible baked beans. We also have 7 layer salad.
So today is a simple meal day

Do you use fresh or frozen peas? And do you have the sweetened mayo on top with the cheese and bacon?

We do not use sweetened mayo,,,just "real " mayo from shelf,,, I actually finish mine off on plate with bleu cheese crumbles and a touch of BC dressing. But no one else in family likes that extra "bite"
We use fresh as long as I can find,,if not,,,it still tastes good,if not great

Sweet potatoes - I think I will fry them in the cast iron skillet then sear the steak. Greens I grew along with some organic celery with avocado dressing.

Our wedding anniversary was yesterday. Tonight's dinner is a center cut of leg of lamb, with a red wine reduction with garlic and rosemary, parmesan risotto, roast asparagus, and dessert is some of the thumbprint cookies I baked for treats at church tomorrow. I also made gluten free brownies for that.

pork butts are 12 hours in and smelling, omg I am starting to baste at 175 degrees,, Mrs K is already pushing in and pinching off, "for a taste"...lol,,gonna be great by 4pm tomorrow

If you go to my posts in photography group,, my hcp daughter turned 31 yesterday. I love her so. What she does not know is tomorrow, we have so many friends coming to celebrate her bday,, if yall wanna come,,,come on.. it's all for my "lil bit" as I call her
