What's for Dinner, Mon., June 24, 2019

Vegetable curry over couscous. Toasted pine nuts and chopped cilantro over the top.

A little dessert tonight: gelato. This is a new flavor called lemon bar ice. The difference is that it's sweetened with monkfruit, so lower sugar.

We're going with grilled swordfish, grilled asparagus with balsamic glaze, and steamed fingerling potatoes with olive oil and fresh herbs from my garden.

doctored up frozen pizza. Topped it w/ spinach, onion, bell pepper, garlic and ham

I made dad a boiled dinner w/ keilbasa, cabbage, potato, carrots and onions.

(It doesn't feel right that Mom's not there. Been crying since I got back.)

The Landlady(!) had the day off and she went to Coney Island Beach to catch some rays. Afterwards, she went shopping in the Russian neighborhood of Brighton Beach. Here's the bounty she brought home:

Mixed green salad (red leaf, green leaf and baby spinach) with purple grape tomatoes, thinly sliced red onion, pine nuts and golden raisins served with a honey mustard sauce.

Pan fried red snapper, Creole style with a sauce of olive oil, garlic, onion, parsley, chopped tomato, chunks of green & jalapeño & yellow & red peppers with a splash of red wine.

Slices of a very sweet apple marinated in brandy with cappuccino will make a lovely dessert.
