What's for Dinner, Sat., June 29, 2019

I saw these beautiful spring rolls on a blog post when I was searching around for ideas for meals on hot summer days.



The RG made up a plate of them and we are having them tonight! We have some with pork and some with shrimp. There are also all-vegetable spring rolls. He made peanut sauce and ginger-sesame sauce to go with them.

For dessert we are having peach croustade, which he is also making.

A ginger-turmeric kombucha should go great with this.

Those are some pretty and yummy looking rolls( kiwi strawberry?) I once made 1000 spring rolls for a punk wedding. That was arduous.

2. A giant salad

Sautéed a ton of kale, onion, garlic, summer squash and threw that on top of some lettuce. Added tomatoes, dried cranberries and freshly grated Parmesan. Lemon water to drink, maybe some blueberries and cream later.

Homemade marinara, garlic roasted red peppers and basil.

My neighbor gave me some lemon curd she made, it's delicious. So I got some fresh strawberries to go with it

4. Hot & humid here, great night for a main dish salad

so we are having a tropical "Cobb" salad with chicken thighs with curry, mango, avocado, tomato and greens. I can't seem to make a link work, but it was from Bon Appetit, called Tropi-Cobb Salad. My son and I made it together - it's so nice to cook with my kids.

Those spring rolls look fabulous!

I’m snacking my way through dinner—some yogurt, an avocado, a banana, a bit of chocolate, maybe a beer later.
