What's for Dinner, Sat., Aug. 3, 2019

Cold plate of vegetables that I've crispened in ice water: radishes, celery, scallions, peppers, and zucchini slices. I have crackers, too, plus dips and hummus with olives and one with red peppers.

The RG made another noodle dish with various vegetables. He baked it and we're going to have it at room temp tonight. As is his usual, after baking it, he sautes it so it's crispy on the outside.

For dessert, sliced apple and cheese.

we had a nice pasta salad with tomatoes, avocado, and bacon. Dessert is peach cobbler.

With lentils, shallots, garlic, and kale. Made in my instant pot from a Cook's Country recipe.

It was in one of the cookbooks, couldn't find it on their website.

1 1/2 pound sausages. I got half sweet italian pork, and half hot chicken
2 thinly sliced shallots
5 minced garlic cloves
1/4 t thyme
1C chicken stock
1C water
1C lentils. Book says "French Green" because they will not get too soft. Sprouts didn't have that, so I got organic green.
2T whole-grain mustard
12 oz chopped kale

Heat olive oil on high saute setting, brown the sausages all over, transfer to plate

Add shallots and cook until softened, a minute or so. Add garlic and thyme, cook 30 seconds until fragrant.

Stir in stock, water, lentils, mustard and 1/4 t black pepper. Nestle sausages into the pot, adding juices from the plate they rested on.

High pressure cook for 25 minutes, quick release.

remove sausages, tent with foil. Use high saute setting, stir in kale until wilted & tender, about 3 minutes. Check seasoning .


I'll definitely make that often.

all homemade, using thighs instead of breasts

served w/ ziti (not homemade)

garden salad (romaine, celery, grape tomato, celery, onions, carrots and radishes)

ice cream sandwich for dessert
