Related: About this forumAssorted leftover veggies, an heirloom (Early Girl) tomato, fresh and dried herbs,
onion, garlic (all sauteed in a pan), and 2 ounces of angel hair pasta makes a delicious, easy and inexpensive lunch. I spent as much time making it as I would have driving to some dump like McDonald's for garbage food.
I love salads for lunch, but sometimes I want more of a "meal" meal.
What are some of the lunchtime favorites of the group here?

Not much beats a homegrown Early Girl!

I also make pasta or rice for lunch when I'm home, it's quick to make if I don't have any left over from something else. And easy to use up whatever vegetables or meat I have in the fridge.
I also like to thaw a few shrimp, then use leftover mexican rice, peppers, garlic, onion, radish and cilantro to make shrimp tacos. As long as I remember to get a few shrimp out of the freezer in the morning, it's also really fast. Leftover chicken & beef make good tacos quickly too.
And of course, 2 eggs, some Burger's Smokehouse ham, and loaded hash browns makes a good lunch too.
Damn, I wish I could stay home every day

Often times it's onion, broccoli, spinach, chopped fresh tomatoes, and mushrooms. Sprinkled with cheese on top and served with salsa on the side.
You're right, Auggie, it takes the same amount of time to make something up like that as it would for me to get in my car and drive to a fast-food restaurant. And your own cooked food is always much better!
I never think of them for lunch, but they're a great idea. Thanks for sharing!
