Time to get out the grinder

I have a 6 hp industrial meat grinder I'll be using later today to grind up an axis mixed with an HEB brisket. I asked the butcher to save me some beef fat trimmings. I wasn't sure if there was going to be enough fat on the brisket. Axis deer have no fat at all. I want it to be fairly lean but still juicy enough for burgers on the grill. It ends up as really rich tasting hamburger meat. I only add the fat and a small amount of Kosher salt. It makes great tacos, burgers, chili, spaghetti sauce, and anything else you would normally use hamburger meat for.
