What's for Dinner, Sat., Aug. 24, 2019

Pasta with ragu sauce, which the RG started this a.m. and which has been simmering for hours.

In addition, salad roll-ups. The lettuce is this beautiful stuff I get at the farmer's market. Then the RG made a vegetable mixture and we put it in the lettuce and roll it up. De-lish. These will have my cucamelons in them; first time I've ever grown them. They are so cute: they look like little watermelons and taste like a cucumber marinated in lime juice.

For dessert we are having a fruit bowl. We stopped at a fruit bowl place (claims to have Hawaiian origins) and bought it this morning. It is this big bowl piled high with strawberries, blueberries, and topped with acai berries. Also in there are chia seeds.

they are delicious, but know that the cucumber beetle and squash borer would get them before I could ever have a taste.
Maybe if I lived in a cooler clime.

2. Cheese tortellini

Those little melons do look very cute.

I'm making cheese tortellini with broccoli, tomatoes, asparagus & ham. Looked good on the Pioneer Woman show last week, and I should get a few lunch portions leftover to freeze.

3. My version of MuShu Chicken, with ground chicken today

INGREDIENTS
1 pound Thin-Sliced Breast Fillets cut crosswise into thin slices
1 tablespoon vegetable oil divided use
2 eggs lightly beaten
1 cup of shiitake mushroom caps thinly sliced
3 cups of bagged shredded cabbage such as a coleslaw mix
2 teaspoons minced ginger
2 tablespoon soy sauce
2 tablespoons hoisin sauce
1 teaspoon sesame oil
1 teaspoon honey
2 teaspoons cornstarch
salt to taste
For serving: flour tortillas or mandarin pancakes sliced green onions, hoisin sauce



INSTRUCTIONS
Heat 1 teaspoon of oil in a large skillet over medium heat. Add the eggs and season to taste with salt and pepper. Cook, undisturbed, until a flat omelet forms, about 3-4 minutes. Carefully flip the eggs and cook on the other side until done, 1-2 minutes more.
Remove the eggs from the pan and cut into strips. Cover to keep warm.
Wipe out the pan with a paper towel.
Heat the remaining 2 teaspoons of oil in the pan.
Add the chicken and cook, stirring occasionally, until meat is browned and cooked through, 4-5 minutes. Remove the chicken from the pan and place on a plate; cover to keep warm.
::if I have eggs, I use them, if not, No big deal. I use whatever mushrooms I have.::

This calls for a specific brand of chicken breasts-piffle- I buy a local organic chicken.

Tonight I 'll use 2 flour torts, tomorrow , I'll make rice for under the mix.

Since it's cooler out today, I am frying up some Lake Erie perch my hubby caught. I set the fryer up outside. I bread the fish fillets with panko crumbs.

with maple syrup from Iowa's oldest continuously run business. Bacon and fried eggs. The peach and cucumber salad we had earlier in the week, and there's some cherry-berry mix too. Younger son needs to gain weight so this supper is good for that!

I prepared a pot of navy bean soup this afternoon with ham from the freezer at TJ's request. Between sampling that and a large sandwich I ate this afternoon I am not so hungry.

I have a portion of Ahi Tuna I thawed and plan to sear it in a skillet. Both TJ and FLFC don't like fish much so it will be a treat for just me after TJ goes to work.
