What's for Dinner, Wed., Oct. 2, 2019

I'm making Beyond burgers with all the trimmings: lettuce, tomato, onion, pickles. Maybe even cheeseburgers with a slice of cheddar or Swiss.

If I choose the Swiss burger, it will have a couple sliced sauteed mushrooms on it.

A slice of eggplant on the side, topped with mozzarella and tomato sauce.

Chopped salad with cherry tomatoes, celery, and green peppers.

Dessert: Key lime pie

and salad. For dessert, gluten free macaroons. I had water today...hadn't had much and it was warm today.

my son is our weeknight chef, and I hoped he would come up with an unusual sauce. He didn't disappoint: his sauce had pureed peaches, dijon mustard, ketchup and a little brown sugar. It was good, and I think the pork and sauce leftovers will make tasty sandwiches. To go with we had baked potatoes and tomatoes and cucumbers.

Still healing my wrist ...trying to find healthy take out alternatives that I don’t have to cook. their commercial told me about their new warm quinoa bowls.
I picked up two -one for dinner, one for lunch tomorrow. I ate the Baja meatless it was very good -though I added salt!

they looked good, but the ad didn't say what the grain was. Better you add the salt than them.
