What's for Dinner, Wed., Oct. 9, 2019

Sausages, broccoli rabe, and pasta.

Salad is from my "monastery" cookbook and is called "Orecchiette, Arugula, and Radicchio Salad." It also has cherry tomatoes and olives in it.

Dessert will be baked apples with cinnamon and either a little ice cream or yogurt. I like to warm raisins and dried cranberries in orange juice to rehydrate them, then stuff the core of my apple with that. Also add a cinnamon stick.

1. Chicken-Veggie Broth and Rice, and several cups of ginger tea

I ordered take out from a new place last night, I regret that decision.

3. I made my dad and sis a boiled dinner

only all they had for protein was a ham steak. I cooked all the veggies (cabbage, turnip, carrots, potatoes and onions) in some water with some "Better than Bullion" veggie stock base. I simply pan-fried the ham steak on the side.

Al and I are having a frozen pizza (probably "meat lovers" or "supreme", but I have some eggplant that I'm roasting to put on top. Maybe some black olives too.

5. Nothing special- chicken/rice/broccoli.

We are just happy that PG&E didnít cut our power off. We were lucky and escaped Northern California power outage; however, we were prepared. Lots of water, manual can opener, lanterns (being able to read a book by lantern light is a necessity during outages). 🤗
