1 can Prego classic Alfredo sauce (or bacon flavored)
1 can chicken broth (or veggie broth)
1 bag of frozen cauliflower
chopped onion to taste
Makes about a quart of soup
You can roast the cauliflower for color and flavor or steam it about 10 minutes in about a cup of water. Add the onion, broth and cheese sauce. Leaving the water in doesn't hurt. Bring to a boil and then reduce heat to low. Stir gently until it is not bubbling, cover and let it simmer at least 15 minutes. Serve hot.
I also added some garlic, black pepper and turmeric.
I recently went on a low carb diet because of health and was looking for some new recipes. I made this up because I had all the ingredients and it was cold enough for soup. I usually make my soup from fresh food and leftovers, but needed something quick. I figured it comes in about 12.5 grams of carbs for a 1 cup serving. Not counting calories right now.

(7,627 posts)Im gearing up to start a low carb keto style diet because my doctor said I'm now prediabetic. This sounds like a nice evening meal, easy to make and I bet very tasty.

(16,948 posts)Found out Oct. 1. I thought I had been staying on track, but guess I wasn't. So I have cut down to 100 grams of carbs or less a day. My cholesterol was lower, so I had some play to change my diet until I figure out what I want to eat.
Hope if you try it, you'll like it. I think it'd be good with broccoli too. If you find any recipes, please share

(32,969 posts)I forgot to say, I have been getting the Prego at Dollar Tree for $1, broth at Kroger 2/$1 and cauliflower at Kroger $1.19, so it is cheap to make.
