Related: About this forumSo I have this steak...
Its a nice strip steak, grass fed, cooked sous vide to 135, and then seared in cast iron. But then we were unexpectedly short one dinner guest and now I have one perfectly cooked steak lurking in the fridge.
What to do with it? I could put it back into the zipper bag and reheat it to 135 sous vide. I could cut it up and stir fry it with random veggies found in my crisper drawer. I could also chop it up, sauté with mushrooms and onions, and make a sandwich out of it. Or, as long as were talking mushrooms, stroganoff it.
Suggestions welcome.

(5,631 posts)I always cook an extra steak - under done. Put in frig for the next mornings breakfast.
Slice and heat through in the same pan after turning eggs and all will be ready at the same time.
One of my fav meals!

sandwiches (philly-style cheese steaks if there's enough and I have peppers in the house)
add thin slices to packaged ramen, along with (and dispose of the salt pack it comes with)
if it's been cooked rare, mince and add some wochestershire sauce for an imitation steak tartar
slice thinly and stir fry with onions and whatever vegetables are in the fridge; serve with rice
marinate, slice thinly, and add to a salad
mince and use in a ragu or add to a pre-made sauce
With only two of us in the house we've gotten good at using up leftover meats.

(4,737 posts)Only do it to 125, the texture can get weird if you bring it all the way back up.
Me, I'd slice it super thin and make some nice steak sandwiches; that's about one of the only ways I think well-cooked is actually better.
