What's for Dinner, Tues., Jan. 28, 2020

Tortellini-spinach-chopped vegetable soup in chicken broth/cream base. There are also bits of prosciutto in it. Cranberry pecan bread to go with it.

For dessert, carrot cake with cream cheese filling/icing, plus chopped walnuts on the top. Of course, hot ginger tea to accompany the dessert.

Regarding the making of my ginger tea, the RG suggested I make it without peeling the ginger. I said I would if I could be sure my ginger was organic. I found some beautiful organic ginger at the grocery store, so I made it with the peel on last night. Wow! What a difference. So much more flavorful. It's so easy, too, just peeling it and chopping it into pieces, then putting plastic wrap over the top while crushing it with the heavy pestle.

FWIW, he roasts beets with the peel on them, too. He scrubs them, then covers with olive oil and Malton salt and coarsely ground black pepper. They have a smoky, earthy taste. Incredible.

1. I've never figured out a way to like beets.....

But have not tried roasting.

Dinner tonight--Sliced ham, mashed sweet potatoes, cooked cabbage with lots of unsalted butter and pepper.

2. My mom makes Borscht, only way I like beets.

Sliced peppers, onion and vegan italian sausage wrapped up in a flour tortilla. Cultural mix.

Which almost never happens. Nothing fancy... a local pizzeria. We can't really afford it, but it's Al's birthday and he wants to go, so we're going.

I haven't thought about what I'd order. I'll take a look at the menu on the ride there.

I'm pretty sure beer will be involved.

Did you make enough beets for me?

and enjoy your meal at the pizzeria. I went to one the other night with my friend and the food looked incredible. I didn't have anything because I'd already had dinner, but my friend's pizza was remarkable. It is just a local place but it's new and it's getting quite a following.
