What's for Dinner, Thurs., Feb. 13, 2020

Pork tonnato.

Cucumber salad with red onion in cream sauce.

Roasted asparagus in ginger sesame sauce (also has Dijon in it).

Dessert: hot ginger tea with chocolate biscotti and a bowl of fresh raspberries. Will drizzle agave over the raspberries.

NolaBears Taco soup

Post a favorite easy recipe.
This is ridiculously simple and my husband and sons’ favorite for years:

Taco Soup

1 lb. Ground turkey

3 cans beans—kidney, pinto, black or garbanzo in combination

1 can corn

1 can Rotelle tomatoes

1 pkg dry Ranch Dressing mix

1 pkg dry taco seasoning.

You can mess with it and add onion and green pepper as you sauté the meat but we often don’t. Just sauté meat and throw the rest together and heat to let flavors blend. Eat with corn chips and, if you like, shredded cheese or sour cream.

It’s a great go-to.


I have taco flavored ground turkey and I am adding onions. Avocado bits and Mexican style cheese on top


Hot decafe tea.

Just got home from my mom’s and dug out 2 chicken thighs from the back of the freezer. Chicken curry over basmati rice for us tonight!

pepper/bit of curry powder/marjoram/parsley/celery seed/garlic salt. bit less butter.

grandma's recipe, but i did not remember it + had no idea it was sicilian. she used cheez its.

doctored-up frozen pizza. It was a 3-cheese pizza, and I added ham, onions, bell pepper, garlic and extra cheese.

Dad and Sis got breaded/baked boneless pork chops, roasted potatoes w/ onions, garlic & rosemary, and steamed broccoli & carrots.

Haven't been around much as Mom was moved from the nursing home to the hospital. She's back at the nursing home, but they're monitoring her blood pressure and anemia. She also has diverticulitis. She had to have a blood transfusion, and it was nice to see her perk up, but at the same time she gets pretty argumentative.
