What's for Dinner, Sat., Feb. 15, 2020

Roasted chicken. It was brined first to make it very tender.

Salad: minced carrots, red onion, and other vegetables in creamy dressing and put in a cup of iceburg lettuce.

Popover bread. Eggs, flour, 1/2 & 1/2, 3 T butter, s & p. Also has a mixture of grated cheddar and parmigiano. Baked in a very hot oven.

Tonight, it's my turn to cook.

I bought some boneless pork chops and created a marinade that's sort of like Teriyaki sauce. Here's where this gets weird. I'm going to dip the meat in eggs and coat with bread crumbs, probably double dipping the chops. Then I'll bake them.

These will be accompanied by long grain and wild rice. I've made a nice salad of Romaine lettuce, slices of tomato, thin slivers of red onion, chunks of mushrooms, slices of black olives, raisins and almond slivers. I'll probably put olive oil and vinegar on it.

For dessert, we have some fresh strawberries and I'm going to melt some chocolate on them and serve with brandy.

I think roasted chicken is my favorite all-time meal. I especially love all the things you can do w/ left-over chicken.

We had hot dogs, mac & cheese, and sliced tomatoes.

I made some homemade oatmeal thumb-print cookies this afternoon, that that's dessert.

on a bed of romaine, cream of asparagus soup, and cheddar and scallion scones.

with Beyond Beef and it's really good. I may have overdone it on the spices, though.
