What's for Dinner, Tues., Feb. 25, 2020

Chicken francese and zucchini casserole.

The zucchini casserole is something the RG came up with on his own. It has goat cheese and mozzarella mixed in and it's topped with parmesan.

For dessert we're having tea biscuits topped with orange marmelade.

INGREDIENTS
1 tablespoon olive oil
1 small white onion, peeled and diced
1 large carrot, peeled and diced
4 cloves garlic, peeled and minced
4 cups vegetable stock
2 (15-ounce) cans chickpeas (a.k.a. garbanzo beans), rinsed and drained
1 (15-ounce) can fire-roasted diced tomatoes
3 tablespoons tomato paste
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
pinch of crushed red pepper flakes, to taste
Kosher salt and black pepper, to taste
3 cups roughly-chopped kale leaves or baby spinach
chopped fresh cilantro and fresh lemon wedges, for serving


INSTRUCTIONS
Heat oil in a large stockpot over medium-high heat. Add onion and carrot and sauté for 5 minutes, stirring occasionally, until the onion is soft and translucent. (To save time, mince the garlic while the onion is cooking.) Then add garlic and saute for 1 more minute, stirring occasionally, until fragrant. Add in the vegetable stock, chickpeas, tomatoes, tomato paste, cumin, cinnamon, and red pepper flakes, and bring to a simmer. (While the soup is coming to a simmer, chop the kale and cilantro, and slice the lemon wedges.)
Reduce heat to medium-low, and stir in the chopped kale. Continue simmering for 3 minutes until the kale has slightly softened.
Taste and season with your desired amount of salt and pepper. (I used a generous pinch of each.)
Serve warm, garnished with fresh cilantro and served with a fresh lemon wedge.


I doubled the spice amounts by using up my own
Moroccan spice mix, I like the heat and spice.

I also add some pre cooked rice

and a salad. I had to go buy a bunch of chilies to make it--jalapenos, poblanos, anaheims--and then blacken them under the broiler.

Spoiler alert: I need to clean my oven because my smoke alarm kept going off while I was blackening them.

homemade vegetable soup, couple plain old saltines with Vermont cheddar cheese, and a steaming cup of lemon tea. Dessert? Don’t laugh....I’m going to have a piece of root beer barrel candy.

Lentil soup, fried zucchini sticks as an appetizer, a big stack of flat bread and date cake with burnt sugar frosting for dessert.

I bought some gluten free ones from Ians...but they cost a fortune so I made my own with gluten free bread crumbs and white fish...really good. Love mac and cheese but can't do dairy either so I have to experiment with dairy free cheeses to see what works...your meal sounded great...except the part about a cookie...I want a cookie to and am out of cookies. As you can see reading this the next day, I am posting late late as I am at my daughter's who is sick...and I ate at a Chinese buffet needed gluten free... cheap but not great...

It was pretty good. We used drumsticks, six for three people. My weeknight cook said it was somewhat tedious to make, but stuck the recipe in the binder I have for saving recipes, which I'm guessing means he wants it again but wants me to make it We have a nice Chilean Sauvignon Blanc to go with it.
