What's for Dinner, Mon., Mar. 9, 2020

Appetizer: vegetable egg rolls with sweet chili sauce

Parsley-pork chops, brought to a golden brown in the cast iron skillet. Served with ricotta.

Cornbread, baked in a cast iron skillet. Has bacon in it.

Mesclun salad with radish, cucumber, white onion, carrot, asparagus, and yellow peppers. We blanched the vegetables for 60", cooled them, and put on top of the greens. Lemon vinaigrette for the top.

Dessert: no-sugar shortbread cookies with apricot preserves on top; hot ginger tea.

We're having sambal oelek grilled chicken skewers, cilantro jasmine rice and stir-fried asparagus and snow peas.

our usual doctored-up frozen pizza. This time it's got ham, sausage, broccoli, onion, garlic and extra cheese.

Dad & sis got grilled ham steak, baked beans and steamed broccoli & yellow squash

Black bean, rice & corn& avocado burritos. Decafe tea.


I have one of those veggie choppers that make nicely cubed veggies, cuz I am a sucker for gadgets. I chopped an onion for the burritos, and I dropped the container, all of those beautifully cut onions went everywhere. Sniff.
