Easy Recipes to Cook While You're Self-Quarantined

'Here are some simple dishes that can be made mostly with what you have on hand.

1. My wife and I bought a lot of rice and beans.

Iíve been eating this bean recipe for 3 days and it gets better as it sits.

My local supermarket has been out of them entirely for the past week. Not even any pasta.

9. Do you have any Mexican or Asian grocery stores near you?


They usually will have more of these supplies since it is a mainstay of their meals.

10. Yeah, in fact that's part of the problem

my neighborhood is about 75% Latino (and I'm less than a mile from the heart of Koreatown)and they were smarter than me and go to the shelves before I did. I'm sure it's only going to last a bit longer and I do have a few pounds of beans here, but I'd love some lentils and white beans and basmati rice.

6. What I made last night

Mashed potatoes.
Green Peas.
Sauerkraut. Be sure to rinse off the extra salt.
Ham hock. cook for a long time then remove meat and add to sauerkraut.
