What's for Dinner, Sat., Mar. 21, 2020

I'm starting the thread a little early because I thought with everyone staying home, we might have some people cooking up good mid-day meals, too.

We have a big pot of bean/lentil soup on the stove. It has beet greens, carrot, onion, celery, and potatoes. The beans are cranberry beans, which we were able to get fresh from the market.

On top of the soup is grated parmesan, chopped parsley, and snipped microgreens--arugula and leek.

Adding: we sliced the rest of the loaf of bread the RG made and put French cheese on some of it. Triple cream.

Mom made a big pot and it’s delicious. Had some for lunch and am ready for more for dinner.

No real recipe, boiling them both with onion & garlic in chicken broth till tender, then blending them into a cream base. I will likely add in shredded carrots and spinach for color and extra vitamins.

Garlic drop biscuits, maybe later.

And hot decafe tea.

Not exactly how I planned to celebrate but I'm happy to be sitting around in t-shirt and jeans

Have champagne chilling. Boring the kids with all of our remember when this happened stories. Still mad about the flowers (they had ONE job! lol)

I bought an anniversary card a while back when Papyrus closed and the sentiment was oddly relevant to these times. My husband made me a bouquet of flowers from azaleas and loropetalum in our yard and it looks great!

Off to share this with The Lounge - my other peeps.
