My dinner today Okra Chicken chili

I didn't make enough for leftovers, and it turned out so good.

I used 1/2 bag of cut unbreaded frozen okra, 1/2 fresh sweet onion 5 cloves of fresh garlic, a couple tablespoons of jalapeno slices, and about 10 ounces of mild Pace picante sauce. I had some leftover cooked chicken breast and added it when everything else was cooked. It turned out so good and I wish I would have made more

I've made this as a vegetarian dish too and it is good that way too.

1. Did you have any Corn bread or tortillas? It sounds yummy!

We made a stir fry. Sausage, garlic, onions, celery, squash, jalapenos, green peppers.

We make lots of stir fry. One pot cooking!

3. I've been on a lower carb diet since Oct.

So no corn bread or tortillas.

I make stir fry pretty often. That sounds so good!

2. You had me at the typo in the title

The best part of trying to make my own tofu years ago was the okara, the soaked and pureed soybeans at the end. Okara made fantastic chili and burgers.

Okra, not so much. I was put off it for life by the slimy okra and tomatoes my junior high school cafeteria served up three times a week. That stuff was ghastly.

4. I didn't notice the typo, but got it fixed

I worked in the kitchen in the local hospital for a couple of years, and they served okra and tomatoes for the kidney patients. I really liked it, and I make some combination once in awhile. I think the okra is similar to green beans in taste and texture.

I will be on the lookout for okara, now that I know about it

Japanese grocers might carry it frozen on occasion, but they tend to make it at home. I had no success prying it loose from tofu shops in Boston's Chinatown. They just thought I was crazy for asking.

I imagine okra and tomatoes can be good if the okra is parboiled to deslime it. My junior high school skipped that step and the stuff was universally hated.
