Roasted leg of lamb, marinated in garlic, rosemary, and other herbs.
Roasted potatoes. Over the potatoes were frizzles of potato which had been deepfried.
Broccoli salad, which I made. It had toasted sunflower seed, raisins, red onion, and bacon in it.
Dessert was banana bread pudding.

(26,173 posts)I'm on my own in isolation and barely have an appetite so I pulled the first thing I could find, out of the refrigerator.
It's actually pretty good chili. I used tomatoes that I stewed last autumn, and my own home made chili seasoning mix.

(11,686 posts)Mashed yams and a salad kit. Yes, I am doing a pre prepped salad. For desert French Silk pie. I waited to long to get fresh cranberries so no cranberry sauce this year.

It's pretty simple, after the first time I made it, I left out the olives. Even though I used good olives from the olive bar instead of nasty canned olives, I just didn't think they fit. I like it more italian, so since then, every time I make this I add an extra half pound of hot italian sausage to the pound of 93% lean beef, leave out the olives and am extra generous with the garlic and cheese.
I also roasted 2 pounds of carrots this afternoon, so I will have a good dinner and a lot of tasty leftovers.

(35,421 posts)I saw a recipe in a magazine (which I cannot find now), but I recall I wanted to make it. Roasted carrots with tarragon and tossed greens. I have a beautiful, healthy tarragon plant from which to cut the tarragon.
Anyway...an idea.
I like the idea 'cuz I like an element of sweetness in my salads.

(10,375 posts)that I sliced some up and put on my lunch salad. I made them with no other seasoning than salt and pepper so that I could season each serving of leftovers to go with my food.

(35,421 posts)I am getting more and more envious of your canning abilities.
Must be nice to be able to pull out a jar of something you canned last year. My mom was a good gardener and canner, so I have fond memories of going to the pantry for a jar of tomatoes to make dinner. After we became adults, she still canned and we would receive a jar of canned gooseberry jam as part of a birthday present. Her tomato preserves were the best! Ummm, how I loved them on toast.
I hope to do some canning this coming summer. With all the time I'm having to spend at home because of covid, I should have a good yield on veggies this summer.

(9,772 posts)and I make jam, pickles and we put peas, pesto, corn, okra and other stuff in the freezer, but you put me in the shade!!! I look forward to seeing your posts as the seasons progress.
I bought a food dehydrator last summer, mostly for figs, but hoping to do apples next fall, too. Not sure what else to use it for except to let my neighbor borrow it for deer jerky which I wouldn't touch with a 10 foot pole!

(652 posts)We live in fruit country so peaches, pears, apricots, nectarines abound. We harvest apples from feral trees. We have mulberries and black raspberries growing wild on our property.
We started an organic co-op almost 20 years ago (we are out of the active farming) but it still goes on and grows wonderful strawberries.
I haven't done plums yet, maybe this year.
We do dehydrate: bananas, apples, and a lot of herbs. Basil, rosemary, thyme, coriander (leaves and seeds) and same with dill, chives, peppers, oregano, sage, mint ...
It is mostly fun, some of it's work, but it all pays off with jars of goodies in the winter!
