Chinese dumplings.
Fried rice using chicken that was glazed with dark soy sauce. The usual vegetables such as carrots, scallions, chopped broccoli.

(16,784 posts)When I make chicken soup, I use the rest of a whole chicken that I baked, cut up onion, celery with leaves, baby carrots.
I use 3 cartons of Kirkland Organic Chicken Broth, with Better than Bullion Chicken Stock for added flavor.
After about 3 hours on low, I take out the broken up chicken, let it cool, then reap the meat, removing all traces of bones. I add a cup of Orzo, frozen green beans broken up, corn, let cook on low for another couple of hours.
Walla! Hearty chicken vegetable soup that is BETTER than Campbells.

(35,658 posts)A friend of mine used to make chicken soup and then add a buffet type aspect to it. There would be little bowls of grated parmesan, chopped herbs such as parsley, thyme, etc., various types of dried noodles or other crunchies, and one could customize their soup a bit.

(4,516 posts)Tonight they are the Tex Mex variety - ground beef and cheese in a hard shell with lettuce and tomato.
Pickled radishes and okra on the side, banana bread for dessert.
