What's for Dinner, Sun., April 19, 2020

Brunswick stew made with ground pork. Will add chicken later.

Lentils.

Broccoli rabe cooked with garlic and olive oil.

Pears with cheese.

I made carrot cake with cream cheese frosting. It also had pineapple, walnuts, and golden raisins in it. Ginger tea to go with it.

Chucking in the carrots that roasted with the chicken.
Basmati rice - leftovers that are easily reheated.
Will probably end up with the leftover Indian rice pudding that I made earlier in the week.

in the crockpot right now, carrots and taters to be added in a bit. Corn on the side. Rhodes rolls are rising now, to be baked while the roast rests.

I'm using American cheese from the deli instead of Velveeta. Also adding a pound of boneless skinless chicken thigh that I'll cook in my instant pot and shred with a stand mixer. I then mix the chicken in right before adding the macaroni.

That Brunswick stew sounds pretty good. I had to look it up. One place said that the original Brunswick stew was made with squirrel. I wish my mother would've had that recipe back when I was in school and used to get a lot of squirrels when hunting.
