What's for Dinner, Thurs., April 23, 2020

Chicken thighs, carrots and potatoes, and broccoli salad.

The broccoli salad is something the RG helped me with, just off the top of his head. I like how he can come up with a recipe by just thinking about it. In this case, he told me to chop pecans and hazelnuts, mix them with sesame paste (2 different kinds), a little soy, sesame oil, and toss it with the broccoli. It was good, but it was too salty, so since tomatoes take salt out of a dish, we put in grape tomatoes. Worked like a charm!

For dessert we're having shortbread cookies with creamy pistachio filling. Another RG invention.

and not as sweet as real ice cream, but i like it. I'm trying to not have carbs.

3. Avocado Tuna Salad & decafe tea

Ingredients
1 (5 oz) can tuna packed in water or oil drained
1 ripe avocado roughly chopped
1/2 cup cucumber chopped
1/4 cup minced celery
1/4 cup minced red or green onion
2 Tbsp chopped fresh cilantro or parsley
1 Tbsp olive oil
1 Tbsp lemon juice
1/2 teaspoon kosher salt
Freshly ground black pepper
Instructions
Place all of the ingredients in a medium bowl. Mix with a fork or spoon until the avocado is roughly mashed and mixed through.
Serve on lettuce wraps, toast, or in a sandwich. To store, cover tightly with plastic wrap and refrigerate for up to 2 days.


I put in some sliced in half cherry tomatoes. I really liked this & it will go in regular rotation.
