Local markets, even Whole Foods and TJ, don't have any right now. I have tried Kroger, Safeway, Whole Foods, two local chains....
I have feta longing to be made into spanikopita.

(54,990 posts)I have some in my freezer, but don't think it would ship well or I would gladly send it for a sample of your finished product (since I am too lazy and it is too hot to bake)

(110,903 posts)What I'd be tempted to do is make my own puff pastry. No, it won't be the same, but it will work and it will be very good. It just won't have the same texture as filo.
I'm having trouble sourcing GF products right now. They're closed/not shipping, too.
We're going to be faced with a lot of shortages from now on. Some things won't be back permanently. Others might be after a long absence.
(I always made it using melted butter instead of olive oil, so puff pastry is not that big a stretch)
