(Sound fun.)
Potato Hobo Packs are great for camping and just a fun way to cook (with little clean-up!). Cooking in foil combines the freshness of steaming with the intense flavor of grilling, since the high heat caramelizes the food on the bottom of the pack.
With a hobo pack, you can add your favorite herbs or vegetables (fennel, celery, carrots, thyme, rosemary, chives). You could also add stew meat. The recipe is very forgiving. If youre cooking over a campfire, make sure your bed of embers is nice and hot. You can nestle the foil pouch right among the embers.
You can also cook in an oven. Preheat your oven to 350 degrees and bake for 15 minutes longer than indicated below.

(5,639 posts)Made it easy to make a meal to take on camping trips and could be prepared in advance.
You can add some cooked sausage and it works really well.

(5,641 posts)These are fantastic and easy. Could make ahead in some cases and have it ready to pop in oven as soon as you walk in the door and about 45 min later a plateful for everyone.
Easiest combo and tasty too:
Chicken breast or ground beef patty
(Add seasonings to taste at this step)
Top with 6 or less 1/4 in slices of potato.
Top this with a slice of onion
Next add some carrot slices or sticks or baby carrots
Top with a pat of butter and more seasoning for the veggies. Thyme is great for the chicken and a steak seasoning for the gbeef.
Super good stuff. And you can get pretty gourmet too.
I just 'cook' for myself, getting bored/frustrated/hungry with meager ideas, need to get up and do something(s,) so every idea helps (tho I rarely/never do chicken breast or ground beef patty, tho used to keep frozen burgers in freezer when kids were around; they're doing for THEIR kids now!)
