I had meatloaf this time last week. So I'd better change it up and go for something with those chicken thighs I have in the freezer. exact nature, TBD.

5. A burger steak, rice, and sugar snap peas

A nice big cup of coffee with sugar, milk, and my favorite flavored creamer. I’ve had a headache all afternoon and realized about a half hour ago that I haven’t had any caffeine today. Problem solved in 4 sips!

Later, I will have oatmeal cinnamon cookies and frosty cold milk for dessert. The recipe I tried out was just ok. The cookies spread too much. The flavor is good, but they need something more. I’m thinking adding a little more flour and some ground walnuts should make them great next time. And maybe substitute in a handful of cinnamon chips for half of the ground cinnamon? I’ve never used the chips before.

Also, try this easy cinn role with them

Get can of crescent roll dough. Spread it out and pour on the chips. Roll the indiv crescent rolls up around the chips and bake according to pkg. while that bakes make and easy icing with powdered sugar a little butter and then thin with a tiny bit of milk.

Pour icing over baked rolls. Awesome!

I was thinking of making a meatloaf, but I'll make him a cheeseburger.

It almost feels to me like he has this "Rain Man" thing going on w/ the cheeseburgers. Instead of "five minutes to Wopner," I have "2 days to cheeseburgers!"

Come to think of it... my mom LOVED a good burger. I didn't know that about her until about 10 years ago (I guess because she always seemed to make us meat-and-potato type meals), but it's true. (I miss you, Mom!)

For dessert, there's an iced-lemon cake or some banana bread that he purchased over the weekend. I was prepared to make something homemade, but there's just so much sweet stuff in the house that I can't justify making more.
