What's for Dinner, Sun., Nov. 22, 2020

Appetizer is three kinds of fish with various sauces and capers. One is salmon with sour cream. Another is mackeral in spicy sauce. The third I forgot. Crackers. Cucumber slices drizzled with olive oil. Maldon salt and freshly ground pepper.

Rice pilaf with chicken breast.

For dessert, cookie with nut butter. Also a little pear-apple tart with cheese slices. Spicy chai tea.

It's a cold, damp, dark and nasty day in the Catskills. We've been indoors all day and the Landlady(!) is on a roll and she's making 2 homemade pizzas.

One pie will be her homemade sauce and piles of fresh mozzarella with a dusting of grated Romano cheese.

The other pie will have sauce and cheese along with anchovies, onions and green pepper slices.

A spinach/mushroom/cherry tomato salad will round out the meal.

Chianti and lemon water for beverages.

I wish all the DU foodies a great week ahead!

Baked chicken legs (nothing fancy - salt, pepper and garlic)
Broccoli
Mashed potatoes

saute sliced onions, sweet peppers, garlic in olive oil, get some spaghetti cooking - add some frozen petite peas into the veggies, then one of our quarts of home canned, heirloom tomatoes - add a small cube of frozen pesto, some salt, black pepper, oregano and hot pepper flakes...once the pasta is done, drain, mix with the veggies, top with grated parmesan reggiano....with a glass of a red wine.

Takes about 20 min, so delicious!!!!

It was delicious and my wife enjoyed it too. She is allergic to black pepper and tomatoes and has a textural aversion to cooked onions so I have to be creative.

Her only complaint was that the bechamel sauce layer was a little too much.

somebody beat up on me w/ a lazy stick today.

I made grilled cheese sandwiches and added the very last of the leftover meatloaf to them.

A can of Progresso chicken noodle soup.

grapes for dessert.

seems like a big chore to cook just for me...to many sandwiches or cereal for dinners...so I cooked tonight and plan to continue. I made bone in pork chop, baked potato...had a salad and grapes for dessert. It turn out great. I come from a mother who feared pork and cooked it until it was dry as a bone...but I use a meat thermometer these day...what a difference. I breaded the chop and sauteed it in olive oil. It was very tasty. Your meals always sound so good.
