to do with. Usually I just serve them a la carte on a snack platter with other canned fishes like kippers, salmon or tuna, some assorted cheeses and breads. That's all good eats, but what else do you do with sardines? Maybe smashed up into a sandwich spread?

Sardines in a tomato sauce over penne - last night's version had black olives in it, since I had some handy.
Open-faced sardine and avocado sandwiches, lightly grilled, are another staple. But mostly I just eat them as is or as part of an antipasto

but cook them outdoors if you can - I like them grilled. That way, your kitchen will not smell of sardines for a week!
