POTATO KUGEL CUPS

'This delicious potato kugel is based on my friend Lauren's recipe and she swears by using red-skin potatoes. The cup idea comes from my husband's best friend Adam's mom, Geanie (what a mouthful). Hubby remembers going to their house on Saturday nights and raiding the fridge for these cups. The best part about them is that every piece is a crusty corner piece, so nobody has to fight over that coveted crunch.'


3/4 cup olive oil, divided
3 whole eggs
2 teaspoon kosher salt
1/2 teaspoon coarse black pepper
6 large Idaho potatoes
1 large onion, quartered

I hate noodle kugel and wish I never made it because my kids love it.

I have a zucchini kugel recipe that's good too.

6 medium zucchini peeled, quartered & sliced (the pieces will look like triangles)
1-2 medium onions chopped
1/2 teaspoon baking powder
Salt (for caramelizing the onion in)
1-2 tbsp of oil for the onions
1cup flour
4 eggs
1/2 cup oil
Pepper to your taste

Prep the zucchini and set aside. Caramelize your onions in the 1-2 tbsps of olive oil with the salt. I use a fair bit of salt because the original recipe called for onion soup mix and I hate all that MSG. Caramelize them slowly (don't be rushy. Let it go on low for 25 minutes because the flavour is better). Mix all the ingredients together. Bake, uncovered, in a greased 9''x13" pan at 350 degrees for 1 1/2 hrs or until set & golden brown.
It freezes pretty well.
