(Jewish Group) Spanish Sephardic Charoset

2 apples
2 pears
½ cup marcona almonds
½ cup hazelnuts
½ cup walnuts
½ cup pistachios
½ cup chopped dates
½ cup chopped figs
½ cup yellow raisins
¼ tsp ground cloves
½ tsp ground ginger
1 tsp cinnamon
1 tsp lemon zest
½ cup dry red wine

This sounds yummy! Oh course, I have NO idea what "marcona almonds" are and are unlikely to find them in northern Oklahoma, given I can't even get matzoh here.

15 dried figs, chopped
15 dried dates, chopped
2 to 3 tablespoons sesame seeds, lightly toasted (optional)
1 teaspoon ground cinnamon
1 tablespoon freshly grated gingerroot
Dash of ground cardamom
1/8 teaspoon cayenne pepper, or more, to taste
dry red wine


PREPARATION
Finely chop the figs and dates and add the sesame seeds and spices. Stir in enough wine to make a paste. Process through a food processor if a thick texture is dsired. Store in the refrigerator.
