UNIVERSITY PARK, Pa. Mushrooms may contain unusually high amounts of two antioxidants that some scientists suggest could help fight aging and bolster health, according to a team of Penn State researchers.
In a study, researchers found that mushrooms have high amounts of the ergothioneine and glutathione, both important antioxidants, said Robert Beelman, professor emeritus of food science and director of the Penn State Center for Plant and Mushroom Products for Health. He added that the researchers also found that the amounts the two compounds varied greatly between mushroom species.
"What we found is that, without a doubt, mushrooms are highest dietary source of these two antioxidants taken together, and that some types are really packed with both of them," said Beelman.
Whoo hooo, my first two logs of Shiitakes started producing a month ago and my next batch of spore plugs arrived just the other day. I think I will make another order of plugs and try to triple my production next year.

misted it and kept it in the laundry room . Got two or three harvests from it as I recall.

I have mushrooms in my cheese omelet every morning, eggs from my chickens.

I have a few rogue Sugar and Red Maples (sugars are 2nd only to white oaks for Shiitakes) that have been invading my White Pine and Red Pine groves. I trim/harvest them out and buy spore plugs from Amazon.
Cut, drill, hammer, wax and set aside for next years harvest.
Easy peasy...

I used to keep up quite a garden and would have loved to try mushrooms. I'd like to do Chickens and have a goat for milk and eggs as well. But both climate and polution thwart my dream. The air is saturated with salts and metals and he ground is poor. The best I can do is tomato, eggplant and herbs all indoors.
Mushrooms... wow.
