Very low carb pudding/soft ice cream...

I've done this before, but it really worked this time with Greek yogurt and its lower water content.

Unflavored nonfat Greek yogurt, about a cup, which is 10 carbs per the label. (I used the cheap America's Choice house brand)

A couple of drops of vanilla extract to taste.

Sweetener (Splenda, saccharine, Stevia...) to taste (one packet should do)

If vanilla is too vanilla, add another packet of sweetener if necessary, and a few spoonsfull of cocoa powder to taste. Nuts are be OK, too.

I went through half of a two pound yogurt container today-- it just hit the spot to deal with an ice cream craving.

I bought a whole bunch of extracts (Strawberry, Almond, Lemon, etc in addition to Vanilla) so that I'd have variety.

Just a real treat when you feel like you want something sweet!

that are indistinguishable from regular ice cream - vanilla and chocolate. Try them if they're available in your area. When I get the craving I go straight to Breyer's.

Anyway, I'll check and see if we have those two around here.

In the past I've been skunked by other brands with "Sugar free" and "low carb" on the front, but the back says something else. We'll see how it works here.

(Betcha they don't have "fat free", though.)

Maybe because they concentrated their milk products, increasing the lactose? Or did they use some of those sweeteners that you still had to count because still had an effect on blood sugar? Anyway, I like the low-carb version and, IIRC, there are 3 or 4 grams of fat in a serving. Not heart-attack levels, LOL.
