While Sloane was in Jamaica he encountered cocoa where the locals there drank it mixed with water. After trying it, he was reported to have founded it nauseating. Sloane then found a way to mix the cocoa with milk to make it more pleasant tasting. Upon returning to England, he brought the chocolate recipe back with him. National Cherries Jubilee Day Cherries Jubilee Day is set aside to celebrate a dessert that takes cherries and turns them into something spectacular. Fresh cherries are cooked in a sweet sauce into which warmed liqueur, usually kirsch or fruit brandy, is mixed and set alight before being spooned over a chilled bowl of vanilla ice-cream while still burning with a blue flame. This show-stopping flambéed dish is credited to the famous chef, Auguste Escoffie, who created it for the 1897 Diamond Jubilee celebrations of Queen Victoria.
