Chicken Tinga Recipe

Late today, I know! This week we made the Mexican Puebla recipe for chicken tinga. This is not a completely traditional version of this dish, as it is typically made with chipotle in adobo, and we used dried chipotle and annatto instead. You can use any leftover roast chicken or even fried chicken for this. If you have the skin, getting it nice and crispy to chop up and sprinkle on top would is an awesome thing, just remember to keep it skin-side-up and remember it won't get crispy in the pan, only after it's drained a little.

Toppings are, of course, a personal thing. We use feta instead of of the more traditional Cotija because we like it and it's much easier to find! Parsley is actually more traditional in this dish, but we prefer cilantro.

Family-style Beef Chili Enchilada Recipe

We made these enchiladas using our Texas chili recipe, and they came out delicious. You can use any number of different fillings, though it should be something slow-cooked and easy to shred with enough sauce/gravy to coat things. Chicken and pork will work just as well as beef, as well.

Of course you can switch up the cheese on top, as well. If you want something that will brown better, or if you want something that will become a bigger melty mess, do what you like. It's all good!

Homemade Crispy Fried Chicken recipe

We don't do a lot of frying at home, because we don't have a deep fryer. Deep frying in a home kitchen is a huge pain and a huge mess, but ever once in a while you just gotta make something deep fried! So, we decided we were going to do fried chicken! This recipe is pretty bare bones, but comes out tasty, juicy, and crispy. You can add whatever seasoning you like under the flour, but the trick of sprinkling it over the top of the flour instead of mixing it in is super helpful and ensures you get more of the seasoning on the chicken.

In other news, I just got laid off from my job, so who knows, maybe that means I'll be doing more interesting cooking experiments? We'll see, hopefully I'm not out of work for very long.

Homemade Cream of Mushroom Soup Recipe

It's sort of coming to the end of soup season what with all the warm weather that's allegedly coming our way, but we wanted to do this incredibly rich and delicious cream of mushroom soup recipe! We're lucky that we have access to lots of really interesting fresh mushrooms, and we use a variety of them in this soup. They all have different flavours and textures, and it makes for a more interesting and complex soup if you can mix a few different kinds. If you can't, and all you can get are just button or crimini mushrooms, it still comes out delicious, but the trick is to get some good colour on them before they are added to your soup!

The herb mix can easily be customized based on your tastes. I think I said oregano in the video (incorrectly), but the typical mix is thyme, tarragon, and maybe some marjoram or savoury.

Peach Cobbler Recipe

Coming from Ontario, Canada, I was pretty unfamiliar with cobbler. Mostly in this neck of the woods we made crisps, which is some kind of a fruit mixture topped with a sort of streusel and then baked, like a bottomless pie. Hubby comes from Texas, and he's more familiar with cobbler. We had a jar of beautiful Ontario peaches that we canned back in 2016 that we wanted to use up, so here we go!

If you don't have canned peaches to hand, you can take fresh peaches and simmer them in a light syrup until they're soft to achieve the same result. Also, it really looks like a mess before it goes in the oven. It looks like it's not going to work, or that it's not mixed enough, but trust me, it will work! There was no camera trickery between the mess that went into the oven and the really quite delicious dish that came out at the end!

Cast Iron Skillet Pizza Recipe

After we did the pizza dough last week, we wanted to do some pizzas this week! (well, we filmed it all at the same time, but you know). These are obviously just examples of how to do it, and you can do whatever you like. At our old place we had pizza stones in our gas oven, and they worked really well. Our new place we don't have the pizza stones (and it's electric), so we did these pizzas in our big ol' cast iron skillet.

The dough we made held up to all of these pizzas, even the rather soupy one with the very fresh mozzarella. The crust came out crispy and nicely browned for all three pizzas. You do want to work reasonably quickly so you don't scorch the bottom of the crust, or you can turn the heat off once it gets up to temperature, assemble your pizza, and then pop it right into the preheated oven. Use whatever toppings you like!

Homemade Pizza Dough Recipe

So, pretty simple and basic one this week, we made pizza dough! Next week's video is going to be several different options on what to put on that dough to make some delicious pizzas, but this one is just a back-to-basics pizza dough. This comes out bready, so it's not really the right kind of dough if you want to make a thin-crust pizza. It is delicious and tender, though. Bakes nicely in the pan-style of pizza we made, and held up very well to all of the toppings.

We used instant yeast, which you do not need to wake up in warm water before adding to the mix. If you have active dry yeast, you would still need to do this step, and the instructions are in the description.

No COVID-19 bailouts for firms that use tax havens, Prime Minister Justin Trudeau says

Prime Minister Justin Trudeau says his government will not allow companies that use offshore tax havens to receive COVID-19 bailout funds.

During the House of Commons’ first virtual sitting Tuesday, Trudeau was pressed by the Bloc Québécois to prevent companies that don’t pay their fair share of tax from benefitting from government aid.

Last week, under repeated questioning from both the BQ and NDP, Trudeau had refused to make the same commitment, saying that his government would not withhold wage subsidies from a worker just because of the behaviour of their employer.
