First, passing legislation that undoes court cases isn't done "with the stroke of a pen." And many cases can't be undone with legislation since they're based on how judges applies the Constitution. In fact, there's not much a legislature - regardless how liberal and aggressive they are - can do to get around a court stacked with right wing judges who "interpret" the Constitution according to their own warped philosophies. Even if they are able to pass new laws, the court will be bound by stare decisis to apply the same standard and invalidate them.
FYI, this isn't about just the Supreme Court. The vast majority of cases don't even make it to the Supreme Court. They are instead decided by and stop at the circuit courts of appeals - which Trump is stacking with young right wingers who will serve for life. And, for the most part, the circuit courts only take up cases appealed from the district (trial) courts, which Trump is also filling with right wing ideologues - and those cases are not always appealed because of cost and other factors.
We are losing the courts for at least the next generation. If we don't get a Democratic president in 2020, it will be longer than that.
