and Whitney Houston's cover of "I Will Always Love You" are two upgrades; no disrespect intended for Bob Dylan or Dolly Parton.

For those that enjoy Christian music, two great examples are Selah's cover of "I Look To You" - written by R. Kelly and made popular by Whitney Houston, and Pentatonix' cover of "Mary, Did You Know?", which was originally recorded by Michael English.

Don't know if these qualify, but I love Eric Clapton's re-think of "Layla", and Neil Sedaka's slower version of "Breaking Up Is Hard To Do". Same artists, better rendition of the same song.
