Very simply, because Trump is punishing people who are trying to plan ahead for their next gig, because that's a de facto acknowledgement that Trump lost the election.

But by resigning, Barr can now freely pursue that next gig without having to make such an admission.

IOW: a very, very cowardly move by a coward.
